4 salmon fillets (6 oz each)

4 tablespoons unsalted butter

4 garlic cloves, minced

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)

1 lemon, zested and juiced

Salt and pepper to taste

1 can (15 oz) white beans (such as cannellini or great northern), rinsed and drained

1 cup vegetable broth

1 cup fresh spinach

1 tablespoon olive oil

Red pepper flakes (optional, for garnish)

Instructions
 

Prepare the Salmon: Pat the salmon fillets dry with a paper towel and season them with salt and pepper on both sides.

    Make the Garlic Butter: In a small saucepan, melt the butter over medium heat. Add the minced garlic and fresh thyme, and sauté for about 1-2 minutes until fragrant but not browned. Stir in the lemon juice and zest. Remove from heat and set aside.

      Cook the Salmon: Heat a large skillet over medium-high heat, add a drizzle of olive oil. Once hot, place the salmon fillets skin-side down in the skillet. Cook for about 4-5 minutes until the skin is crispy. Carefully flip the fillets and brush generously with the garlic butter mixture. Cook for an additional 3-4 minutes or until the salmon is cooked through and flakes easily with a fork.

        Prepare the White Beans: While the salmon is cooking, in another pot, combine the rinsed white beans and vegetable broth. Bring to a simmer over medium heat. Stir in the spinach and cook for an additional 3-4 minutes until the spinach wilts. Season with salt, pepper, and a touch of lemon juice to brighten the flavors.

          Serve: Place a scoop of the lemon white beans on each plate and top with a salmon fillet. Drizzle any remaining garlic butter from the skillet over the top of the salmon.

            Garnish: If desired, sprinkle with red pepper flakes for a bit of heat and extra fresh thyme for color.
