1 lb Italian sausage, cut into bite-sized pieces

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, thyme, basil)

Salt and pepper to taste

8 oz fettuccine or your choice of pasta

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1/2 cup frozen peas (optional)

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

    Prepare the Sausage: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the sausage pieces and cook them until they are browned and cooked through, about 5-7 minutes. Remove sausages from skillet and set aside.

      Make Garlic Butter: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and sauté for about 1-2 minutes, until fragrant. Be careful not to burn the garlic.

        Combine Ingredients: Return the cooked sausage to the skillet. Sprinkle in the dried Italian herbs, salt, and pepper. Mix to combine and cook for another 2 minutes.
