8 large shrimp, peeled and deveined

2 tablespoons unsalted butter

3 cloves garlic, minced

1 teaspoon lemon juice

Salt and pepper to taste

4 slices of sourdough bread

4 slices of sharp cheddar cheese

2 tablespoons mayonnaise

Fresh parsley, chopped (for garnish)

Prepare the Shrimp: In a medium bowl, season the peeled shrimp with salt and pepper.

    Make Garlic Butter: In a skillet over medium heat, melt 1 tablespoon of butter. Add the minced garlic and sauté for about 30 seconds until fragrant.

      Cook the Shrimp: Add the seasoned shrimp to the skillet. Cook for 2-3 minutes, flipping halfway through, until they turn pink and opaque. Squeeze lemon juice over the shrimp and remove from the heat.

        Assemble the Sandwich: Spread mayonnaise on one side of each slice of bread. Place two slices of cheddar cheese on the unbuttered sides of two slices of bread. Top each with half of the garlic butter shrimp. Add another slice of cheddar on top before placing the second piece of bread (mayonnaise side facing out) on top to complete the sandwich.

          Grill the Sandwich: In the same skillet, melt the remaining tablespoon of butter over medium heat. Carefully place the assembled sandwiches in the skillet. Grill for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

            Serve: Remove from the skillet, slice in half, and sprinkle with fresh parsley.
