Garlic Butter Shrimp Scampi Lasagna

9 lasagna noodles

1 pound large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 lemon, juiced and zested

1 cup heavy cream

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1 tablespoon fresh parsley, chopped

Salt and pepper to taste

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Noodles: In a large pot of boiling salted water, cook the lasagna noodles according to package instructions until al dente. Drain and set aside.

      Prepare Shrimp: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the minced garlic and red pepper flakes, cooking for about 1 minute until fragrant.

        Add Shrimp: Stir in the shrimp and cook until they turn pink, about 2-3 minutes. Add lemon juice, lemon zest, and season with salt and pepper. Remove from heat and let cool slightly.

          Make Sauce: In the same skillet, add the heavy cream and bring it to a gentle simmer. Stir in remaining 2 tablespoons of butter and let it melt. Mix in ricotta, and half of the mozzarella and Parmesan cheese until smooth. Adjust salt and pepper to taste.

            Assemble Lasagna: In a baking dish, spread a thin layer of the cream sauce at the bottom. Place three lasagna noodles on top. Layer half of the shrimp mixture, followed by one-third of the cream sauce. Repeat layers with three more noodles, the remaining shrimp mixture, and another one-third of the cream sauce. Finish with the last three noodles and top with the remaining cream sauce. Sprinkle the rest of the mozzarella and Parmesan on top.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the top is bubbly and golden.

                Garnish and Serve: Once done, remove from the oven and let it cool for 10 minutes. Sprinkle with fresh chopped parsley before serving.
