Ingredients

For the Garlic Butter Steak Bites:

1 lb sirloin steak, cut into 1-inch cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper to taste

For the Cheesy Smashed Potatoes:

1.5 lbs baby potatoes, halved

3 tablespoons olive oil

1 cup shredded cheddar cheese

1/2 cup sour cream

2 green onions, sliced

Salt and pepper to taste

Instructions

Prepare the Potatoes:

    - In a large pot, add the halved baby potatoes and cover them with water. Add a pinch of salt and bring to a boil.

      - Once boiling, reduce heat and simmer for about 15-20 minutes, or until fork-tender. Drain and return to the pot.

        Mash the Potatoes:

          - Using a potato masher or fork, gently smash the potatoes, leaving some chunks for texture.

            - Add olive oil, shredded cheddar cheese, sour cream, and season with salt and pepper. Stir until combined and the cheese is melted and creamy. Set aside.

              Cook the Steak Bites:

                - In a large skillet over medium-high heat, melt the butter.

                  - Add minced garlic and let it sauté for about 30 seconds until fragrant.

                    - Season the steak cubes with salt and pepper, then add them to the skillet in a single layer. Cook for 2-3 minutes per side until browned and cooked to your desired doneness.

                      Add Herbs:

                        - Sprinkle the chopped rosemary and thyme over the steak bites. Toss to coat them in the garlic butter and herbs. Cook for an additional minute.

                          Serve:

                            - On a large platter, spoon the cheesy smashed potatoes in the center. Arrange the garlic butter steak bites around the potatoes.

                              Prep Time: 10 minutes | Total Time: 40 minutes | Servings: 4

                                - Presentation Tips: Garnish the dish with a sprinkle of fresh parsley for color and serve hot, with extra green onions on the side for the cheesy mashed potatoes.
