1 lb sirloin steak, cut into 1-inch cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 lb Yukon Gold potatoes, peeled and diced

½ cup heavy cream

2 tablespoons olive oil

1 tablespoon Dijon mustard

1 teaspoon garlic powder

Fresh parsley, chopped (for garnish)

Prepare the Potatoes: In a large pot, add the diced Yukon Gold potatoes and cover them with cold water. Add a generous pinch of salt and bring to a boil over medium-high heat. Cook until tender, about 15-20 minutes.

    Make the Garlic Butter: While the potatoes are cooking, heat a large skillet over medium-high heat. Add the butter and allow it to melt. Once melted, add the minced garlic and chopped rosemary. Sauté for 1-2 minutes until fragrant but not browned.
