1 pound sirloin steak, cut into bite-sized cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper to taste

1 pound potatoes, peeled and cubed

½ cup heavy cream

2 tablespoons sour cream

2 tablespoons olive oil

Fresh parsley for garnish

Prepare the Potatoes: In a large pot, bring salted water to a boil. Add the cubed potatoes and cook until fork-tender, about 15-20 minutes. Drain the potatoes and return them to the pot.

    Make the Mashed Potatoes: Over low heat, add heavy cream, sour cream, and 2 tablespoons of butter to the potatoes. Mash until creamy and smooth. Season with salt and pepper to taste, and cover to keep warm.

      Cook the Steak Bites: In a large skillet, heat the olive oil over medium-high heat. Add the steak bites to the pan, ensuring they are not overcrowded. Sear for about 2-3 minutes without moving them, until browned, then flip and cook for an additional 2-3 minutes until desired doneness is reached.

        Add Garlic Butter: Lower the heat to medium. Push the steak bites to the side of the skillet and add the remaining 2 tablespoons of butter, minced garlic, rosemary, and thyme. Stir to combine and let the garlic sauté for about 1 minute until fragrant.

          Combine and Serve: Toss the steak bites in the garlic butter mixture until evenly coated. Remove from heat.

            Plating: Divide the creamy mashed potatoes between plates, spoon the garlic butter steak bites over the top, and garnish with freshly chopped parsley.
