Ingredients

1 lb sirloin steak, cut into bite-sized pieces

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper to taste

2 cups baby gold potatoes

1 cup shredded sharp cheddar cheese

2 tablespoons olive oil

1 teaspoon paprika

Fresh parsley, chopped (for garnish)

Instructions

Prep the Potatoes: Place the baby gold potatoes in a pot, cover with water, and add a pinch of salt. Bring to a boil and cook until tender, about 15-20 minutes. Drain and set aside to cool slightly.

Smashed Potatoes: Preheat your oven to 425°F (220°C). On a baking sheet, place the cooked potatoes. Using a fork or the bottom of a glass, gently smash each potato until slightly flattened. Drizzle with olive oil and season with salt, pepper, and paprika.

Cheesy Topping: Sprinkle shredded cheddar cheese generously over the smashed potatoes. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbling and the potatoes are crispy.

Cook the Steak Bites: While the potatoes are baking, heat a large skillet over medium-high heat. Add 2 tablespoons of butter. Once melted, add the steak bites in a single layer, making sure not to overcrowd the pan. Season with salt and pepper. Cook for 2-3 minutes on each side until browned and cooked to medium rare (or your preferred doneness).

Garlic Butter Sauce: Reduce the heat to medium and add the remaining 2 tablespoons of butter, minced garlic, rosemary, and thyme to the skillet with the steak. Sauté for an additional 1-2 minutes until the garlic is fragrant and the butter has melted, coating the steak bites in a delicious sauce.

Combine and Serve: Remove the potatoes from the oven and transfer them to a serving platter. Top with the garlic butter steak bites and drizzle any remaining sauce from the skillet over the top. Garnish with fresh parsley.

              Prep Time: 20 minutes | Total Time: 55 minutes | Servings: 4
