300g spaghetti or linguine

6 large garlic cloves, thinly sliced

1/2 teaspoon red pepper flakes (adjust to taste)

4 tablespoons extra virgin olive oil

1 cup cherry tomatoes, halved

1 cup baby spinach

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Salt and pepper to taste

Fresh basil leaves for garnish

Zest of 1 lemon

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Garlic: In a large skillet over medium heat, add the olive oil. Once hot, add the sliced garlic and red pepper flakes. Cook until the garlic is golden brown but not burnt, about 2-3 minutes.

      Add the Vegetables: Stir in the halved cherry tomatoes and cook for another 3-4 minutes until they start to soften. Then, add the baby spinach and sauté until wilted, about 1-2 minutes.

        Combine with Pasta: Add the drained pasta to the skillet and toss everything together. Gradually add a bit of the reserved pasta water, stirring until you achieve your desired sauce consistency.

          Season and Serve: Stir in the grated Parmesan cheese, lemon zest, and season with salt and pepper to taste. Toss well to combine and remove from heat.

            Garnish: Plate the pasta and garnish with fresh basil leaves and a sprinkle of extra Parmesan if desired.
