German Potato Pancakes Recipe

4 medium-sized russet potatoes, peeled and grated

1 small onion, finely grated

2 large eggs

1/4 cup all-purpose flour

1 teaspoon baking powder

Salt and pepper to taste

1 teaspoon garlic powder (optional)

1/4 cup vegetable oil (for frying)

Applesauce or sour cream for serving (optional)

Instructions
 

Start by peeling and grating the russet potatoes into a large bowl. To minimize browning, you can soak them in cold water for a few minutes while you prepare the other ingredients.

    Grate the onion and add it to the bowl with the potatoes. This will give the pancakes added moisture and flavor.

      Drain excess moisture from the potato-onion mixture using a fine mesh sieve or cheesecloth, and then return the mixture to the bowl.

        In a separate bowl, whisk together the eggs, flour, baking powder, salt, pepper, and garlic powder (if using). Mix until you have a smooth batter.

          Pour the batter over the potato-onion mixture, and mix everything together until well combined.

            Heat the vegetable oil in a large skillet over medium-high heat. You want enough oil to create a thin layer at the bottom of the pan to ensure crispiness.

              Once the oil is hot, scoop about 1/4 cup of the potato mixture into the skillet for each pancake. Flatten slightly with a spatula to form a round shape.

                Fry the pancakes for about 4-5 minutes on each side, or until golden brown and crispy. Do not overcrowd the pan; you may need to do this in batches.

                  Once cooked, transfer the pancakes to a plate lined with paper towels to drain excess oil.

                    Serve warm with a dollop of applesauce or a side of sour cream for a delightful balance of flavors.
