4 large Yukon Gold potatoes, peeled and diced

1 onion, finely chopped

2 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream

2 carrots, diced

2 celery stalks, diced

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh chives, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 4-5 minutes until translucent.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the diced carrots and celery to the pot, cooking for another 5 minutes, stirring occasionally.

        Pour in the vegetable broth and bring to a gentle boil. Add the diced potatoes and smoked paprika, and season with salt and pepper.

          Reduce the heat and simmer for 15-20 minutes, or until potatoes are tender when pierced with a fork.

            Once cooked, use an immersion blender to carefully puree the soup until smooth.

              Stir in the heavy cream and adjust seasoning to taste. Heat the soup gently for an additional 5 minutes before serving.
