2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon ground ginger

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground cloves

1/2 teaspoon salt

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

2 large eggs

1 cup molasses

1/2 cup hot water

1 teaspoon vanilla extract

1/4 cup crystallized ginger, finely chopped (optional)

Powdered sugar for dusting

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch cake pan or line it with parchment paper for easy removal.

    In a large mixing bowl, sift together the flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt. Set aside.

      In another mixing bowl, cream the softened butter and brown sugar together until light and fluffy using a hand mixer or stand mixer.

        Add the eggs one at a time to the butter mixture, beating well after each addition.

          Stir in the molasses, hot water, and vanilla extract until combined.

            Gradually add the dry ingredient mixture to the wet mixture, stirring until just combined. Be careful not to overmix. If using, fold in the chopped crystallized ginger for extra zing.

              Pour the batter into the prepared cake pan and smooth the top with a spatula.

                Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.

                  Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

                    Once cooled, dust the top with powdered sugar to add a festive touch.
