1 cup gluten-free all-purpose flour

1 tablespoon sugar

2 teaspoons baking powder

1/4 teaspoon salt

1 cup milk (or almond milk)

1 large egg

1 teaspoon vanilla extract

1/2 cup cream cheese, softened

1/4 cup powdered sugar

1 cup fresh strawberries, diced

Butter or oil, for cooking

Instructions
 

In a large bowl, whisk together the gluten-free flour, sugar, baking powder, and salt until well combined.

    In a separate bowl, whisk the milk, egg, and vanilla extract together until smooth.

      Pour the wet ingredients into the dry mixture and stir until just combined. The batter should be slightly lumpy; avoid overmixing.

        In another small bowl, mix the softened cream cheese with the powdered sugar until smooth and creamy. Set aside.

          Preheat a skillet over medium heat and add a little butter or oil.

            Pour about 1/4 cup of pancake batter onto the skillet for each pancake.

              Using a spoon, drop a small dollop of the cream cheese mixture in the center of each pancake. Then, add some diced strawberries on top.

                Cook for about 2-3 minutes or until bubbles form on the surface of the pancake. Carefully flip the pancake and cook for an additional 2-3 minutes until golden brown and cooked through.

                  Repeat the process with the remaining batter, adding more butter or oil to the skillet as needed.

                    Serve the pancakes warm, stacked high, and topped with extra strawberries and a dusting of powdered sugar.
