Ingredients

4 slices of rustic whole grain bread

4 oz goat cheese, softened

1/2 cup fresh blackberries

2 tablespoons honey

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

2 tablespoons unsalted butter, softened (for spreading)

Dash of sea salt and cracked black pepper

Instructions

Prepare the Filling: In a small bowl, combine the softened goat cheese, fresh thyme, honey, and a pinch of salt and pepper. Mix until smooth and well combined.

Assemble the Sandwich: Spread a generous layer of the goat cheese mixture on two slices of bread. Evenly distribute the fresh blackberries on top of the goat cheese. Place the remaining two slices of bread on top to close the sandwiches.

Butter the Bread: Spread the softened butter on the outside of each sandwich, ensuring even coverage to achieve a golden crust when grilled.

Grill the Sandwiches: Heat a skillet or griddle over medium heat. Place the sandwiches in the skillet and cook for about 3-4 minutes on one side, or until golden brown.

Flip and Finish Cooking: Carefully flip the sandwiches and cook for an additional 3-4 minutes, pressing down slightly with a spatula for even toasting. If the cheese hasn't melted completely, cover the skillet for a minute to help it along.

Serve & Enjoy: Once both sides are golden and the cheese is melted, remove the sandwiches from the skillet. Cut them in half and serve immediately, optionally drizzling a bit more honey over the top for extra sweetness.

              Prep Time: 10 min | Total Time: 20 min | Servings: 2

                - Presentation Tips: Serve the grilled cheese halves on a rustic wooden board alongside a handful of fresh blackberries for a colorful and inviting plate. Drizzle with extra honey and sprinkle with thyme leaves for a final touch.
