24 Golden Oreo cookies, crushed

4 tablespoons unsalted butter, melted

16 oz cream cheese, softened

1 cup sugar

2 large eggs

1 teaspoon vanilla extract

1 cup fresh strawberries, hulled and sliced

1/4 cup strawberry jam

Whipped cream (for topping, optional)

Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.

    In a mixing bowl, combine the crushed Golden Oreos with melted butter. Stir until the mixture resembles wet sand.

      Press the Oreo mixture firmly into the bottom of the prepared baking pan to form the crust layer. Bake for 10 minutes and then let it cool slightly.

        In a large bowl, beat together the softened cream cheese and sugar until smooth and creamy using a hand mixer or stand mixer.

          Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until fully combined.

            Gently fold in the sliced strawberries and pour the cheesecake mixture over the cooled Oreo crust, spreading it evenly.

              Dollop the strawberry jam on top of the cheesecake mixture and use a knife to swirl it gently through for a marbled effect.

                Bake in the preheated oven for 30-35 minutes, or until the center is set and slightly jiggly. Allow to cool at room temperature.

                  Once cooled, refrigerate for at least 4 hours or overnight for the best texture.

                    When you’re ready to serve, lift the cheesecake bars out of the pan using the parchment overhang and cut into squares.
