8 oz (225g) mixed mushrooms (shiitake, cremini, and button), sliced

4 cloves garlic, minced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

2 tablespoons olive oil

2 tablespoons unsalted butter

1 cup shredded mozzarella cheese

1/2 cup shredded Parmesan cheese

4 thick slices of sourdough bread

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Sauté the Mushrooms: In a skillet over medium heat, add olive oil and butter. Once melted and hot, add the sliced mushrooms. Sauté for about 5-7 minutes until they are golden and any water has evaporated.

      Add Garlic and Thyme: Stir in the minced garlic and thyme, cooking for another 2 minutes until fragrant. Season with salt and pepper to taste, then remove from heat.

        Prepare the Toasts: While the mushrooms are cooking, place the sourdough slices on a baking sheet. Lightly drizzle olive oil over each slice on both sides.

          Top with Mushroom Mixture: Spoon the sautéed mushroom and garlic mixture evenly onto each slice of sourdough.

            Add Cheese: Sprinkle the shredded mozzarella and Parmesan cheese generously over the mushroom-topped toasts.

              Bake: Place the baking sheet in the preheated oven and bake for about 10-12 minutes or until the cheese is melted and bubbly, and the edges of the bread are crispy.

                Garnish and Serve: Remove from the oven, let cool for a couple of minutes, then garnish with fresh parsley. Serve warm and enjoy!
