1 ripe avocado, mashed

1/2 cup green goddess dressing (store-bought or homemade)

1/2 cup cucumber, thinly sliced

1 small handful of arugula or spinach

1/4 cup sprouts (alfalfa or radish)

1/4 cup sliced radishes

Salt and pepper to taste

Optional: Sliced tomato, feta cheese, or pickled onions for added flavor

Begin by toasting the whole grain bread slices until they are golden brown and slightly crispy. This will give your sandwich structure and a lovely crunch.
