2 slices of sourdough bread

2 tablespoons unsalted butter, softened

1 tablespoon Dijon mustard

1/4 cup shredded sharp cheddar cheese

1/4 cup shredded Gruyère cheese

2 tablespoons caramelized onions

1 tablespoon fresh basil, chopped

A pinch of garlic powder

Salt and black pepper to taste

Instructions
 

Start by caramelizing the onions: Heat a skillet over medium-low heat, add a bit of butter, and the sliced onions. Cook and stir occasionally for about 20-25 minutes until they are golden brown and sweet. Set aside.

    In a small bowl, mix the shredded cheddar and Gruyère cheeses together.

      Spread the softened butter on one side of each slice of sourdough bread. On the unbuttered side of one slice, spread the Dijon mustard to add a tangy kick.

        Layer half of the cheese mixture on top of the mustard and sprinkle with a pinch of garlic powder, salt, black pepper, caramelized onions, and chopped basil.

          Top with the remaining cheese mixture and place the second slice of bread on top, buttered side facing out.

            Heat the skillet over medium heat, then carefully place the sandwich in the skillet. Cook for about 3-4 minutes until the bread is golden brown and crispy.

              Flip the sandwich carefully and continue cooking for another 3-4 minutes until the other side is also golden and the cheese has melted beautifully.

                Remove from heat and let it sit for a minute before slicing it in half.
