Grilled Cheese Sandwiches

4 slices of sourdough bread

2 tablespoons unsalted butter

1 cup sharp cheddar cheese, grated

1 cup Gruyère cheese, grated

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fig jam

¼ cup caramelized onions

Salt and pepper to taste

Prepare the Ingredients: Start by caramelizing onions. In a skillet over medium heat, melt 1 tablespoon of butter and add thinly sliced onions. Cook slowly until they are golden brown and sweet (about 15-20 minutes), stirring occasionally. Set aside to cool.

    Mix the Cheeses: In a bowl, combine the grated cheddar and Gruyère cheeses. Stir in the chopped rosemary for an aromatic touch.

      Butter the Bread: Lightly butter one side of each slice of sourdough bread with the remaining 1 tablespoon of butter.

        Build the Sandwiches: On the unbuttered side of two slices, spread a thin layer of fig jam. Top the jam with a generous amount of the cheese mixture and add a spoonful of caramelized onions. Sprinkle with a little salt and pepper.

          Top and Cook: Place another slice of bread on top, buttered side facing out. Repeat with the remaining ingredients to create a second sandwich.

            Grill the Sandwiches: Heat a non-stick skillet over medium-low heat. Once hot, add the sandwiches and cook for about 4-5 minutes, until the bread is golden brown. Flip carefully and cook the other side for another 4-5 minutes until all the cheese is melted and the bread is crispy.

              Slice and Serve: Remove the sandwiches from the skillet, let them rest for a minute, then slice diagonally.
