4 Italian sausages (mild or spicy based on preference)

1 tablespoon olive oil

3 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh basil, chopped

1 teaspoon red pepper flakes (optional for extra heat)

Salt and pepper to taste

Bell peppers (red, yellow, green) and red onion, sliced for grilling

Crusty Italian bread, for serving

Fresh arugula, for garnish

Instructions
 

Preheat the grill to medium-high heat.

    In a small bowl, mix olive oil, minced garlic, chopped rosemary, basil, red pepper flakes (if using), salt, and pepper to create a herb-infused marinade.

      Brush the sausages with the herby marinade until well coated. Let them sit for about 15 minutes to absorb the flavors.

        While the sausages marinate, toss the sliced bell peppers and red onion in the remaining marinade until evenly coated.

          Place the sausages on the preheated grill and cook for 12-15 minutes, turning occasionally until well browned and cooked through (internal temperature should reach 160°F/70°C).

            In the last few minutes of grilling, add the marinated bell peppers and onion to the grill. Cook for about 5-7 minutes, until they are tender and have nice grill marks.

              Remove the sausages and vegetables from the grill. Let the sausages rest for a couple of minutes before slicing them diagonally.

                Serve the sliced sausages on crusty Italian bread, topped with grilled peppers and onions. Garnish with fresh arugula.
