2 slices of sourdough or whole grain bread

1 cup mixed mushrooms (cremini, shiitake, and portobello), sliced

1 tablespoon olive oil

2 tablespoons unsalted butter, softened

1 clove garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup grated mozzarella cheese

1/4 cup grated parmesan cheese

Optional: fresh arugula or spinach for garnish

Prepare the mushrooms: In a skillet over medium heat, add the olive oil. Once heated, add the sliced mushrooms and sauté for about 5-7 minutes until they have released their moisture and are golden brown.

    Add flavor: Stir in the minced garlic, thyme, salt, and pepper. Cook for an additional 2 minutes until the garlic is fragrant. Remove from heat and set aside.

      Prepare the bread: Spread softened butter on one side of each slice of bread. On the unbuttered sides, sprinkle a mixture of mozzarella and parmesan cheese evenly over each slice.

        Assemble the sandwich: Spread the sautéed mushroom mixture on top of the cheese on one slice of bread. Top with the second slice cheese-side down, pressing gently to combine it all.

          Grill the sandwich: In the same skillet (wiped clean), place the sandwich over medium heat. Cook for about 3-4 minutes until the bread is golden brown and crispy.
