Guinness and Irish Cheddar Mac & Cheese

2 cups elbow macaroni

1 cup Guinness stout (non-alcoholic version can be used if preferred)

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

2 cups shredded Irish cheddar cheese

1 cup grated Gruyère cheese

1 teaspoon Dijon mustard

1 teaspoon garlic powder

Salt and pepper to taste

½ cup panko breadcrumbs

2 tablespoons chopped fresh parsley (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In the same pot, melt the butter over medium heat. Once melted, add the flour and whisk continuously for about 2 minutes to create a roux.

      Add Liquids: Gradually pour in the milk and whisk until smooth, then slowly add the Guinness stout while stirring. Continue to cook the mixture over medium heat until it begins to thicken, about 4-5 minutes.

        Cheesy Goodness: Lower the heat and add the shredded Irish cheddar and Gruyère cheese a little at a time, stirring until fully melted and creamy. Stir in the Dijon mustard and garlic powder. Season with salt and pepper to taste.

          Combine Pasta & Sauce: Add the cooked macaroni to the cheese sauce, stirring to coat all the pasta evenly.

            Prepare for Baking: Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture to a greased baking dish.

              Add Topping: In a small bowl, mix the panko breadcrumbs with a drizzle of olive oil (optional for extra crispiness) and sprinkle evenly over the top of the mac and cheese.

                Bake: Place the dish in the preheated oven and bake for 20-25 minutes, or until the top is golden and crispy.

                  Garnish and Serve: Remove from the oven and let it cool slightly. Sprinkle chopped fresh parsley on top before serving.
