2 lbs beef chuck, cut into 1-inch cubes

1 tablespoon olive oil

1 large onion, chopped

3 cloves garlic, minced

4 carrots, sliced

3 stalks celery, sliced

4 cups beef broth

1 bottle (about 12 oz) non-alcoholic stout beer

2 tablespoons tomato paste

1 teaspoon dried thyme

1 teaspoon dried rosemary

2 bay leaves

Salt and pepper to taste

1 cup frozen peas

For the Cheddar Herb Dumplings:

1 cup all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

4 tablespoons unsalted butter, cold and diced

1 cup shredded sharp cheddar cheese

2 tablespoons fresh parsley, chopped

½ cup milk

Sear the Beef: In a large pot, heat the olive oil over medium-high heat. Add the beef cubes in batches, ensuring not to crowd the pot. Sear until browned on all sides, about 5-7 minutes. Remove and set aside.

    Sauté Vegetables: In the same pot, add the chopped onion. Cook for 3-4 minutes until soft. Add garlic, carrots, and celery. Sauté for an additional 5 minutes until vegetables start to soften.

      Combine Ingredients: Return the browned beef to the pot. Stir in beef broth, non-alcoholic stout, tomato paste, thyme, rosemary, bay leaves, salt, and pepper. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for about 1.5 to 2 hours, or until the beef is tender.

        Make Dumplings: In a bowl, mix flour, baking powder, and salt. Add cold butter and mix until the mixture resembles coarse crumbs. Stir in the cheddar cheese and parsley. Gradually add milk to form a dough.

          Add Peas: After the stew has simmered, remove the bay leaves and stir in the frozen peas.

            Cook Dumplings: Drop spoonfuls of the dumpling mixture over the stew. Cover the pot and let the dumplings steam in the stew for 15-20 minutes, or until they have puffed up and are cooked through.

              Serve: Gently stir the stew to combine the flavors, and spoon into bowls with dumplings on top.
