Ham, Egg & Cheese Croissant Sandwich

2 large croissants

4 slices of smoked ham

4 large eggs

1 cup shredded Gruyère cheese (or your choice of cheese)

2 tablespoons unsalted butter

1 tablespoon chives, finely chopped

Salt and pepper to taste

Optional: hot sauce for serving

Instructions
 

Preheat your oven to 350°F (175°C).

    Slice the croissants in half lengthwise and place them on a baking sheet.

      In a skillet, melt 1 tablespoon of butter over medium heat. Once melted, add the slices of ham and cook for about 2-3 minutes on each side until they are warmed and slightly crispy. Remove from the skillet and set aside.

        In the same skillet, add the remaining tablespoon of butter. Crack the eggs into the skillet, and season them with salt and pepper. Cook the eggs to your liking: sunny-side up, over-easy, or scrambled.

          While the eggs are cooking, place a slice of ham on the bottom half of each croissant, then sprinkle half of the Gruyère cheese on top.

            Once the eggs are cooked, gently place them over the cheese and top with the remaining cheese.

              Close the croissant sandwiches with the top halves and pop the entire baking sheet into the oven for 5-7 minutes, or until the cheese is melted and the croissants are lightly toasted.

                Remove from the oven, garnish with chopped chives, and serve hot. Drizzle with hot sauce if desired.
