1 medium cauliflower, cut into florets

3 tablespoons harissa paste

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons lemon juice

2 tablespoons fresh cilantro or parsley, chopped (for garnish)

1 tablespoon toasted almonds or pine nuts (optional, for crunch)

Instructions
 

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    In a large bowl, combine the harissa paste, olive oil, ground cumin, smoked paprika, salt, and pepper to taste. Mix until well combined to create a marinade.

      Add the cauliflower florets to the bowl and toss them in the marinade until they're fully coated.

        Spread the marinated cauliflower evenly on the prepared baking sheet. Make sure the florets are in a single layer for even roasting.

          Roast in the preheated oven for about 25-30 minutes, or until the cauliflower is tender and golden brown, tossing halfway through to ensure even cooking.

            Once roasted, remove the cauliflower from the oven and drizzle with lemon juice for a fresh twist.

              Transfer to a serving dish and garnish with chopped cilantro or parsley and toasted almonds or pine nuts for added texture if desired.
