Ingredients

1 pound ground pork

1/2 cup breadcrumbs

1/4 cup finely chopped red bell pepper

1/4 cup finely chopped onion

1/4 cup crushed pineapple, drained

1 tablespoon soy sauce

1 tablespoon teriyaki sauce

1 teaspoon garlic powder

1/2 teaspoon ground ginger

1 egg, lightly beaten

Salt and pepper to taste

For the Pineapple Glaze:

1/2 cup pineapple juice

1/4 cup brown sugar

2 tablespoons soy sauce

1 tablespoon cornstarch mixed with 2 tablespoons water

Instructions

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a large mixing bowl, combine ground pork, breadcrumbs, red bell pepper, onion, crushed pineapple, soy sauce, teriyaki sauce, garlic powder, ground ginger, and the beaten egg.

Season the mixture with salt and pepper. Using your hands, mix until all ingredients are well incorporated.

Form the mixture into 1-inch meatballs and place them on the prepared baking sheet.

Bake the meatballs in the preheated oven for about 18-20 minutes, or until they are cooked through and golden brown.

While the meatballs are baking, prepare the pineapple glaze. In a small saucepan, combine pineapple juice, brown sugar, and soy sauce. Bring to a gentle boil over medium heat.

Stir in the cornstarch slurry and cook for another minute or until the glaze has thickened. Remove from heat.

Once the meatballs are done baking, remove them from the oven and toss them in the pineapple glaze to coat them well.

Return the coated meatballs to the baking sheet and bake for an additional 5 minutes to set the glaze.

                    Prep Time: 15 minutes | Total Time: 40 minutes | Servings: 4
