1 cup whole wheat flour

1/2 cup unsweetened cocoa powder

1/2 cup coconut sugar or brown sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsweetened applesauce

2 large eggs

1/4 cup almond milk (or any plant-based milk)

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1/2 cup dark chocolate chips (optional, for extra flavor)

Instructions
 

Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners or lightly grease it with cooking spray.

    In a large mixing bowl, whisk together the whole wheat flour, cocoa powder, coconut sugar, baking powder, baking soda, and salt until combined.

      In another bowl, mix the wet ingredients: applesauce, eggs, almond milk, melted coconut oil, and vanilla extract. Whisk until smooth and thoroughly combined.

        Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not over-mix! If using, fold in the dark chocolate chips.

          Spoon the batter into the prepared mini muffin tin, filling each cavity about 3/4 full.

            Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted into the center comes out clean. Avoid over-baking as this can dry out the muffins.

              Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
