1 cup Medjool dates, pitted

1/2 cup natural peanut butter (or almond butter)

1/4 cup unsweetened cocoa powder

1/2 cup roasted peanuts, roughly chopped

1/2 cup dark chocolate chips (dairy-free if needed)

2 tablespoons coconut oil

Sea salt, for garnish

Prepare the Base: In a food processor, blend the Medjool dates until they form a sticky paste. This may take a couple of minutes. Scrape down the sides as needed.

    Layer in the Peanut Butter: Add in the peanut butter and cocoa powder to the date paste. Pulse until well blended, and the mixture is smooth and thick.

      Form the Snack Base: Line a small rectangular baking dish (approximately 8x4 inches) with parchment paper. Transfer the date mixture into the dish and press it down firmly with a spatula, ensuring it's evenly spread across the base. Place it in the freezer for about 15 minutes to firm up.

        Add the Nuts: Remove the dish from the freezer and sprinkle the chopped roasted peanuts evenly over the top of the date layer, pressing them down gently into the mixture.

          Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between until melted and smooth.

            Top with Chocolate: Pour the melted chocolate over the peanut layer, tilting the dish to spread the chocolate evenly. Use a spatula if needed to ensure complete coverage.

              Chill: Place the assembled snack back into the freezer for at least 30 minutes to set.

                Slice and Serve: Once set, remove the block from the dish using the parchment paper. Slice into bars. For an added touch, sprinkle a little sea salt on top before serving.
