1 cup unsalted butter, softened

3/4 cup powdered sugar

2 cups all-purpose flour

1/2 cup cornstarch

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup dried strawberries, finely chopped

Red food coloring (optional)

Extra powdered sugar for dusting

Instructions
 

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy. This should take about 3-4 minutes.

      Stir in the vanilla extract and mix until well incorporated.

        In a separate bowl, whisk together the flour, cornstarch, and salt. Gradually add the dry mixture to the butter mixture until a dough starts to form.

          Fold in the finely chopped dried strawberries. If desired, add a few drops of red food coloring to enhance the strawberry color and stir until evenly distributed.

            Divide the dough in half, wrap each half in plastic wrap, and refrigerate for about 30 minutes to firm up.

              Once chilled, roll out one dough half on a lightly floured surface to about 1/4 inch thick. Use a heart-shaped cookie cutter to cut out the cookies and transfer them to the prepared baking sheets.

                Repeat the process with the remaining dough half. Gather any scraps and re-roll them to cut out more cookies.

                  Bake in the preheated oven for 12-15 minutes, or until the edges just start to turn golden brown.

                    Remove from the oven and allow to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

                      Once cooled, dust the cookies with powdered sugar for a sweet finish.
