Ingredients

8 large eggs

2 cups milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon mustard (Dijon or yellow)

4 cups diced day-old bread (preferably white or whole wheat)

1 cup cooked and crumbled breakfast sausage (can substitute with turkey sausage)

1 cup shredded cheddar cheese

1/2 cup diced bell peppers (red and green)

1/2 cup diced onions

1/4 cup chopped fresh parsley (for garnish)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with cooking spray or butter.

Prepare Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, pepper, and mustard until well combined.

Layer Ingredients: In the prepared baking dish, evenly layer the diced bread across the bottom. Top the bread with the crumbled sausage, bell peppers, and onions. Pour the egg mixture over the layers, ensuring everything is evenly coated.

Add Cheese: Sprinkle the shredded cheddar cheese evenly on top of the casserole.

Soak: Gently press down on the casserole with a spatula to help the bread absorb the egg mixture. Let it sit for about 10-15 minutes to allow the flavors to meld.

Bake: Place the casserole in the preheated oven and bake for 45-50 minutes, or until the center is set and the top is golden brown.

Cool and Serve: Remove the casserole from the oven and let it cool for about 5 minutes. Garnish with chopped parsley before serving.
