2 cups fresh mushrooms, sliced (button or cremini)

1/4 cup unsalted butter

1/4 cup all-purpose flour

1 cup vegetable broth

1 cup whole milk

1/2 onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon soy sauce (optional for umami)

Fresh parsley, chopped (for garnish)

Instructions
 

In a large saucepan, melt the butter over medium heat. Once melted, add the chopped onion and sauté for about 3-4 minutes until translucent.

    Add the minced garlic and sliced mushrooms to the pan. Cook for 5-7 minutes until the mushrooms are tender and have released their moisture.

      Stir in the flour and cook for about 1 minute, continuously stirring to combine with the mushrooms.

        Gradually pour in the vegetable broth while stirring, ensuring there are no lumps.

          Next, slowly whisk in the whole milk, and continue to stir until the mixture thickens, about 5-6 minutes.

            Season the soup with thyme, salt, black pepper, and soy sauce (if using) and let it simmer for another 2-3 minutes.

              Remove from heat, and if you prefer a smoother texture, blend the soup using an immersion blender until it reaches your desired consistency.

                Taste and adjust seasoning as needed.

                  Serve warm, garnished with freshly chopped parsley for a pop of color.
