2 cups all-purpose flour

2 large eggs

1 teaspoon salt

1 tablespoon olive oil (optional)

Instructions
 

In a large mixing bowl, combine the all-purpose flour and salt, creating a well in the center.

    Crack the eggs into the well and add the olive oil if using.

      Using a fork, beat the eggs gently, gradually incorporating the flour starting from the edges of the well.

        Once the dough starts to come together, use your hands to knead it gently in the bowl until it forms a smooth ball (about 5 minutes). If the dough is too dry, add a little water, one teaspoon at a time.

          Wrap the dough tightly in plastic wrap and let it rest for 30 minutes at room temperature.

            After resting, divide the dough into quarters. Roll each quarter out on a lightly floured surface to your desired thickness (about 1/8 inch for thin noodles).

              Once rolled out, lightly dust the surface with flour, and fold the dough loosely into thirds.

                Using a sharp knife or pizza cutter, slice the dough into strips of your desired width (about 1/4 inch for fettuccine-style noodles).

                  Unroll the strips and toss them with a little flour to prevent sticking.

                    Repeat the process with the remaining dough quarters.

                      Cook the fresh noodles in a large pot of salted boiling water for 3-4 minutes or until al dente. Drain and serve with your favorite sauce or toppings.
