Ingredients

2 ¼ teaspoons active dry yeast

¼ cup warm milk (110°F)

½ cup granulated sugar, divided

½ cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

¾ teaspoon salt

4 cups all-purpose flour, plus more for dusting

½ cup water

Vegetable oil, for frying

1 cup powdered sugar

3 tablespoons milk (for glaze)

Instructions

In a small bowl, dissolve the yeast and 1 tablespoon of the sugar in warm milk. Let it sit for about 5-10 minutes until it becomes foamy.

In a large mixing bowl, combine the remaining sugar, softened butter, eggs, vanilla extract, and salt. Mix until smooth.

Add the foamy yeast mixture and water to the sugar and butter mixture, and stir until well combined.

Gradually add the flour, one cup at a time, mixing until a soft dough forms. If the dough is too sticky, add a little more flour as needed.

Knead the dough on a floured surface for about 5-7 minutes until it is smooth and elastic.

Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm area for about 1-1.5 hours, or until doubled in size.

After the dough has risen, punch it down and roll it out to about ½ inch thick on a floured surface.

Use a doughnut cutter (or two round cutters of different sizes) to cut out doughnut shapes. Place the cut doughnuts on a floured baking sheet and cover to rise for another 30-45 minutes.

In a deep pot, heat vegetable oil to 350°F for frying. Carefully drop doughnuts into the hot oil (do not overcrowd) and fry for about 1-2 minutes on each side until golden brown.

Remove the fried doughnuts and let them drain on paper towels.

In a mixing bowl, whisk together powdered sugar and milk until smooth for the glaze. Adjust the consistency by adding more powdered sugar or milk if necessary.

Dip the warm doughnuts into the glaze, letting any excess drip off, then place them on a rack to set.
