4 boneless, skinless chicken breasts

1 cup grated Parmesan cheese

1 cup panko bread crumbs

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon dried thyme

2 large eggs

1 tablespoon Dijon mustard

1/2 cup all-purpose flour

Salt and pepper to taste

1/4 cup fresh parsley, chopped (for garnish)

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.

    In a shallow bowl, mix together the grated Parmesan cheese, panko bread crumbs, garlic powder, onion powder, oregano, thyme, salt, and pepper until well combined.

      In another bowl, whisk together the eggs and Dijon mustard until smooth.

        Place the flour in a separate shallow dish and season with salt and pepper.

          Take each chicken breast and dredge it in the seasoned flour, shaking off any excess.

            Dip the floured chicken into the egg mixture, ensuring it is fully coated. Let any excess drip off.

              Finally, coat the chicken in the Parmesan breadcrumb mixture, pressing gently to adhere the coating. Place the coated chicken breasts on the prepared baking sheet.

                Lightly spray the tops of the chicken with olive oil cooking spray to help them crisp up as they bake.

                  Bake in the preheated oven for 25-30 minutes, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F / 74°C).
