1 large egg (room temperature)

1 tablespoon Dijon mustard

1 tablespoon white wine vinegar or lemon juice

1 cup neutral oil (like canola or grapeseed)

Salt to taste

Instructions
 

In a tall, narrow container (like a mason jar), combine the egg, Dijon mustard, and white vinegar or lemon juice. Whisk it together until well blended.

    Using an immersion blender (or a regular blender), blend the egg mixture on the bottom of the container first, then slowly start to lift the blender upwards while continuously blending. This process helps emulsify the mixture.

      Begin to gently pour the neutral oil into the mixture in a thin, steady stream while blending. Make sure to keep blending until the mayo thickens and reaches your desired consistency.

        Once fully blended, taste the mayonnaise and add salt to your preference. If you want it spicier, add a pinch of cayenne pepper or smoked paprika for an extra kick.
