4 large russet potatoes

1/4 cup olive oil

1 teaspoon sea salt

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon dried rosemary

Freshly cracked black pepper, to taste

Optional: A sprinkle of cayenne pepper for heat

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

    Wash and thinly slice the russet potatoes using a mandoline or a sharp knife. Aim for uniform thickness, about 1/8 inch thick, to ensure even cooking.

      Place the potato slices in a large bowl and cover them with cold water. Soak for at least 30 minutes to remove excess starch (this helps ensure crispiness).

        After soaking, drain the potatoes and pat them dry with a clean kitchen towel or paper towels. Make sure they are very dry to achieve a crisp texture.

          In a separate bowl, mix the olive oil, sea salt, garlic powder, smoked paprika, thyme, rosemary, and black pepper. Add optional cayenne pepper if you want some heat.

            Toss the dried potato slices in the oil and spice mixture until well coated.

              Arrange the potato slices in a single layer on the prepared baking sheet, ensuring they are not overlapping.

                Bake in the preheated oven for about 15-20 minutes, flipping the chips halfway through, until they are golden brown and crispy. Keep an eye on them to prevent burning; baking times can vary.

                  Once baked, remove the chips from the oven and let them cool on the baking sheet for a few minutes, where they will continue to crisp up.
