1 ½ cups all-purpose flour

½ cup almond flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon cinnamon

¼ teaspoon salt

½ cup unsalted butter, softened

¾ cup honey

2 large eggs

1 teaspoon vanilla extract

1 cup apples, peeled and diced (about 1 medium apple)

½ cup sliced almonds, toasted

Optional: Powdered sugar for dusting

Instructions
 

Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper for easy removal.

    In a mixing bowl, whisk together the all-purpose flour, almond flour, baking powder, baking soda, cinnamon, and salt until evenly combined. Set aside.

      In a large mixing bowl, cream the softened butter and honey using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.

        Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract until fully incorporated.

          Gradually add the dry ingredients to the wet mixture, mixing just until combined. Be careful not to overmix!

            Gently fold in the diced apples and toasted almond slices until evenly distributed throughout the batter.

              Pour the batter into the prepared cake pan, smoothing the top with a spatula.

                Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.

                  Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Then, carefully turn it out onto a wire rack to cool completely.

                    If desired, dust the top with powdered sugar before serving for an elegant finish.
