Honey Harissa Carrots With Whipped Feta

1 pound baby carrots, peeled

2 tablespoons olive oil

2 tablespoons harissa paste

2 tablespoons honey

Salt and pepper to taste

1 cup feta cheese, crumbled

1/4 cup Greek yogurt

2 tablespoons lemon juice

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large bowl, combine the baby carrots with olive oil, harissa paste, honey, salt, and pepper. Toss until the carrots are evenly coated with the mixture.

      Spread the seasoned carrots on a baking sheet in a single layer.

        Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and caramelized, tossing halfway through for even cooking.

          While the carrots are roasting, prepare the whipped feta. In a food processor, combine the crumbled feta, Greek yogurt, lemon juice, and a pinch of salt and pepper. Pulse until smooth and creamy. If necessary, add a teaspoon of water to reach your desired consistency.

            Once the carrots are done roasting, remove them from the oven and let them cool for a minute.

              To serve, spread a generous amount of the whipped feta on a serving platter and top with the honey harissa carrots.

                Garnish with chopped fresh parsley for a pop of color and extra flavor, and drizzle with any remaining honey if desired.
