4 salmon fillets

3 tablespoons honey

2 tablespoons fresh lime juice

2 cloves garlic, minced

1 teaspoon ground cumin

Salt and pepper, to taste

1 cup fresh cilantro leaves

2 tablespoons olive oil

Zest of 1 lime

Instructions
 

Preheat your oven to 375°F (190°C).

    In a small bowl, whisk together honey, lime juice, minced garlic, ground cumin, salt, and pepper. This will be your marinade.

      Cut 4 pieces of aluminum foil, each large enough to fully wrap a salmon fillet, about 12 inches long.

        Place a generous handful of cilantro leaves in the center of each piece of foil.

          Season each salmon fillet with salt and pepper. Place each fillet on top of the cilantro leaves.

            Drizzle the marinade evenly over the salmon fillets, and sprinkle lime zest for an extra burst of flavor.

              Fold the edges of the foil inward and seal them tightly, creating a packet that contains the salmon and cilantro.

                Place the foil packets on a baking sheet and bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork.

                  Remove from the oven and let the foil packets sit for a few minutes before carefully opening them to avoid steam burns.

                    Serve the salmon directly in the foil packets for an attractive presentation, or place the salmon on a plate with the cilantro for garnish.
