Ingredients
  

4 salmon fillets (6 oz each)

1 cup fresh pineapple, diced

1/4 cup honey

2 tablespoons soy sauce (low sodium)

1 tablespoon olive oil

1 teaspoon garlic, minced

1 teaspoon fresh ginger, grated

Salt and pepper to taste

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a mixing bowl, combine the diced pineapple, honey, soy sauce, olive oil, minced garlic, and grated ginger. Stir well to create a marinade and set aside.

      Season the salmon fillets with salt and pepper on both sides.

        In an oven-safe skillet or cast-iron pan, heat a little olive oil over medium-high heat. Once hot, place the salmon fillets skin-side down and sear for about 3-4 minutes until the skin is crispy.

          Carefully flip the salmon fillets and pour the honey-pineapple marinade over the top.

            Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.

              Once cooked, remove the salmon from the oven and let it rest for a couple of minutes.

                Serve the salmon fillets with the pineapple glaze drizzled over the top, garnished with sliced green onions and a sprinkle of sesame seeds.
