Ingredients

2 cups water

2 tablespoons dried butterfly pea flowers

1 tablespoon honey or agave syrup (adjust to taste)

1 cup coconut milk (or your choice of milk)

1 teaspoon vanilla extract

Ice cubes

Lemon or lime slices for garnish (optional)

Instructions

Prepare the Butterfly Pea Tea: In a small pot, bring 2 cups of water to a boil. Once boiling, remove from heat and add the dried butterfly pea flowers. Let it steep for about 10-15 minutes until the color deepens.

Strain the Tea: After steeping, strain the flowers from the tea using a fine mesh sieve or cheesecloth, discarding the flowers. The tea should have a beautiful deep blue color.

Sweeten the Tea: While the tea is still warm, stir in the honey or agave syrup until dissolved. Allow the tea to cool to room temperature, then refrigerate until chilled.

Prepare the Latte: In a separate bowl, combine the coconut milk and vanilla extract. You can chill this mixture in the refrigerator or simply fill your serving glass with ice cubes before adding it.

Assemble the Drink: Fill a glass with ice cubes, then pour in the chilled butterfly pea flower tea, followed by the coconut milk mixture. For a layered look, pour slowly over a spoon to create distinct layers.

Garnish: Optional—garnish your latte with a slice of lemon or lime on the rim of the glass for a pop of color and a hint of citrus aroma.
