Instant Pot Tuscan Chicken Pasta

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 tablespoon olive oil

3 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 cups (480ml) chicken broth

1 cup (240ml) heavy cream

8 oz (225g) penne pasta

1 cup (90g) sun-dried tomatoes, chopped

2 cups (60g) fresh spinach

1/2 cup (50g) grated Parmesan cheese

Fresh basil leaves for garnish

Instructions
 

Set the Instant Pot to the Sauté function and heat the olive oil.

    Add the chicken pieces to the pot and season them with salt, pepper, Italian seasoning, and red pepper flakes. Sauté for about 5 minutes, or until the chicken is browned on all sides.

      Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

        Pour in the chicken broth and scrape the bottom of the pot to deglaze it, ensuring nothing is stuck.

          Add the penne pasta and sun-dried tomatoes. Close the lid of the Instant Pot, set the valve to Sealing, and cook on Manual high pressure for 5 minutes.

            Once the cooking time is up, perform a quick release of the steam. Carefully remove the lid.

              Stir in the heavy cream, spinach, and grated Parmesan cheese. Mix until the spinach wilts and everything is well combined.

                Adjust seasoning if necessary, adding more salt, pepper, or red pepper flakes as desired.

                  Serve immediately, garnished with fresh basil leaves.
