4 strips of Irish bacon, diced

1 medium onion, chopped

2 cloves garlic, minced

4 medium potatoes, peeled and diced

1/2 head of green cabbage, chopped

4 cups chicken or vegetable broth

1 cup milk

2 tablespoons olive oil

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced bacon and cook until crispy, about 5-7 minutes. Remove the bacon and set aside, leaving the fat in the pot.

    In the same pot, add the chopped onion and minced garlic. Sauté until the onions are translucent, about 3-4 minutes.

      Add the diced potatoes to the pot and stir for another 2 minutes to coat with the bacon fat.

        Pour in the chicken or vegetable broth and bring to a boil. Reduce the heat to simmer and cook for 10 minutes, or until the potatoes are tender.

          Add the chopped cabbage and dried thyme, continuing to simmer for another 5-7 minutes, until the cabbage is tender.

            Stir in the milk and season with salt and pepper. Allow the soup to heat through without boiling.

              Return the crispy bacon to the pot and gently stir to combine.

                Taste and adjust seasoning as needed. Serve hot, garnished with fresh parsley.
