4 large Yukon Gold potatoes, peeled and chopped

1 cup kale, finely chopped

1 cup green cabbage, finely shredded

1/2 cup scallions, chopped (green and white parts)

1/2 cup buttermilk (or substitute with whole milk for a different texture)

4 tablespoons unsalted butter

Salt and pepper to taste

A pinch of nutmeg (optional)

Fresh chives, chopped (for garnish)

Cook the Potatoes: Place the chopped Yukon Gold potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Reduce to a simmer and cook until the potatoes are tender, about 15-20 minutes. Drain and return to the pot.

    Sauté Greens: In a skillet over medium heat, melt 2 tablespoons of butter. Add the chopped kale and cabbage, and sauté until softened, about 5 minutes. Add the chopped scallions and cook for an additional 2 minutes.

      Mash the Potatoes: While the greens are cooking, mash the drained potatoes in the pot until smooth. Gradually mix in the buttermilk, remaining butter, salt, pepper, and optional nutmeg to achieve a creamy texture.

        Combine & Serve: Fold the sautéed greens into the mashed potatoes until well combined. Taste and adjust seasoning as needed.

          Garnish: Serve warm, garnished with chopped chives and an extra pat of butter on top if desired.
