4 large russet potatoes, peeled and cubed

1 cup cheddar cheese, grated

½ cup creamy sour cream

3 tablespoons butter

1 small onion, finely chopped

2 garlic cloves, minced

1 teaspoon thyme leaves

1 cup cooked and shredded corned beef (optional)

1 pre-made pastry crust (Store-bought or homemade)

Boil the Potatoes: In a large pot, place the cubed potatoes and cover them with water. Bring to a boil and cook until fork-tender, about 15-20 minutes. Drain and set aside.

    Sauté the Aromatics: In a skillet, melt 1 tablespoon of butter over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and thyme, cooking for another minute until fragrant.

      Mash the Potatoes: In a large bowl, combine the drained potatoes with the sautéed onion and garlic mixture. Add in the sour cream, remaining butter, and half of the grated cheddar cheese. Season with salt and pepper. Mash everything together until smooth and creamy.
