1 lb sirloin steak, cut into bite-sized pieces

4 tablespoons unsalted butter

5 cloves garlic, minced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Begin by patting the steak pieces dry with paper towels to ensure a nice sear. Season them generously with salt, pepper, and smoked paprika.

    In a large skillet, heat 2 tablespoons of butter over medium-high heat until sizzling.

      Add the steak bites in a single layer without overcrowding the skillet (you may need to do this in batches). Cook for about 2-3 minutes on each side until they develop a nice crust and are medium-rare or cooked to your liking. Remove steak from the skillet and set aside.

        In the same skillet, reduce the heat to medium and add the remaining butter. Once melted, add the minced garlic and thyme. Sauté for about 1 minute until fragrant but not browned.

          Return the cooked steak bites to the skillet, turning to coat them in the garlic butter mixture. Cook for an additional minute to allow flavors to meld.

            Remove from heat, garnish with chopped parsley, and serve hot with toothpicks as an appetizer or over rice/mashed potatoes for a main course.
