1 cup graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

1 (8 oz) package cream cheese, softened

1/2 cup creamy peanut butter

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup heavy whipping cream

Caramel sauce, for drizzling

Chopped peanuts, for garnish

Preheat your oven to 325°F (163°C). Line a muffin tin with paper liners or silicone muffin cups.

    In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined.

      Spoon about 1 tablespoon of the mixture into each muffin cup, pressing down firmly to create a crust. Bake for 5-7 minutes or until set. Remove from the oven and let cool.

        In a large mixing bowl, beat the softened cream cheese and peanut butter together until smooth and creamy.

          Add the powdered sugar and vanilla extract, continuing to mix until combined.

            In a separate bowl, whip the heavy cream until soft peaks form, then gently fold it into the peanut butter mixture until fully incorporated.

              Spoon the cheesecake filling evenly over the cooled graham cracker crusts in the muffin tin. Smooth the tops with a spatula or the back of a spoon.

                Refrigerate the mini cheesecakes for at least 4 hours, or until firm.

                  Once set, remove cheesecakes from the muffin tin carefully. Drizzle caramel sauce over the top of each cheesecake.

                    Finish with a sprinkle of chopped peanuts for added texture and flavor. Serve chilled and enjoy!
