4 slices of rustic Italian bread

1 cup shredded mozzarella cheese

½ cup crumbled goat cheese

½ cup grated Parmesan cheese

1 medium tomato, sliced

1 handful fresh basil leaves

4 tablespoons pesto sauce

4 tablespoons olive oil

Salt and pepper to taste

Instructions
 

Begin by preheating a skillet over medium heat.

    Take the slices of Italian bread and spread 1 tablespoon of pesto sauce on one side of each slice.

      On the unspread side of two slices, layer the mozzarella cheese, crumbled goat cheese, grated Parmesan, tomato slices, and fresh basil leaves.

        Season with salt and pepper to taste before covering with the remaining slices of bread, pesto side facing out.

          Drizzle 1 tablespoon of olive oil in the skillet, and carefully place the sandwiches in the skillet. Cook for about 3-4 minutes until the bread is golden brown and crispy.

            Gently flip the sandwiches over and drizzle remaining olive oil in the skillet, cooking for an additional 3-4 minutes until the other side is equally golden and the cheese is melted.

              Remove from heat and let sit for a minute before slicing the sandwiches in half.
