Instructions
Start by preparing the salad mix. In a large bowl, combine the shredded lettuce, diced tomatoes, diced cucumbers, shredded carrots, sliced red onion, and sliced pepperoncini.
Add the sliced pepperoncini and green olives to the bowl and toss the mixture together.
Drizzle Italian dressing over the salad, then season with salt and pepper to taste. Gently toss until the salad is well-coated with the dressing.
Slice the baguette or hoagie roll lengthwise, ensuring you don't cut all the way through.
Layer the deli meats on one side of the bread followed by the provolone cheese.
Spoon a generous amount of the prepared salad mixture on top of the cheese and meats.
Close the sandwich gently and slice it in half for serving.
Optionally, sprinkle chopped fresh parsley on top for garnish and additional flavor.
