Juicy Italian Chicken Meatballs with Creamy Herbed Ricotta

1 pound ground chicken

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 clove garlic, minced

1 tablespoon fresh parsley, chopped

1 tablespoon fresh basil, chopped

1 teaspoon dried oregano

1 egg, beaten

Salt and pepper to taste

2 tablespoons olive oil (for frying)

1 cup marinara sauce (for serving)

1 cup ricotta cheese

1 tablespoon lemon zest

1 tablespoon fresh chives, chopped

In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, minced garlic, chopped parsley, chopped basil, oregano, beaten egg, salt, and pepper. Mix until everything is well incorporated.

    Once mixed, form the mixture into 1.5-inch meatballs and place them on a baking sheet.

      In a large skillet, heat the olive oil over medium heat. Once hot, add the meatballs in batches, ensuring not to overcrowd the pan. Cook for about 5-7 minutes, turning occasionally, until they are golden brown on all sides and cooked through.

        While the meatballs are cooking, prepare the creamy herbed ricotta. In a bowl, combine the ricotta cheese, lemon zest, chopped chives, and a pinch of salt. Mix until smooth and creamy.

          Once the meatballs are done cooking, remove them from the skillet and drain on paper towels to remove excess oil.

            To serve, warm the marinara sauce in a separate saucepan. Place a generous spoonful of marinara sauce on each plate, add a few meatballs on top, and finish with a dollop of the herbed ricotta.
